SPECIAL 28-PAGE INSIDER’S GUIDE: “MANILA EATS II”
It may not be the city that never sleeps, but Manila certainly is the city that can eat. And eat. Friends happily debate during merienda about whether to have pork belly or waffles for dinner; Facebook wars are waged over the most authentic dim sum; a certain megastar can make a restaurant with a single Instagram tag. In this special 28-page section, we’ve filtered the tastiest of that chatter to give you the new, the noteworthy, and the downright sinful—seasoned with a few new Rogue special treats—to deliver you this year’s edition of Manila Eats. Watch out: It’s hot!

THE ROGUE DISHES: CIBO’S ROGUE SANDWICH, SONJA’S ROGUE CUPCAKE, MAGNUM CAFÉ’s ROGUE MAGNUM
Following the Rogue Gelato, which has become a permanent flavor in Bono Artisinal Gelato’s menu since May 2013, we’ve whipped up a new batch of Rogue-branded dishes for 2014, available during the entire month of May. We have Margarita Forés’s ‘The Rogue Sandwich’ at Cibo, an osso bucco panini with sautéed spinach and melted fontina cheese on crusty focaccia bread; Chef Miko Aspiras’s ‘The Rogue Magnum’ at Magnum Café, an Eton Mess spinoff stabbed with a Magnum bar dipped in Belgian white chocolate and covered in strawberries and salty almonds; and finally, Sonja Ocampo’s ‘The Rogue Cupcake’ at Cupcakes by Sonja, a savory butter biscuit topped with crispy chicken fillet and drizzled with honey.

BREAKING THE FAST: NEAL OSHIMA & ISABEL ROCES
In his first magazine cover shoot in over a decade, legendary photographer Neal Oshima plays on Halsman's idea of suspension—capturing popcorn, apples, oranges, and milk in mid-air around veteran model Isabel Roces. Rogue’s Mara Coson navigates egg puddles, polka dots, and exploding refrigerators to find a celebration of food, art, and photography.

PARDON MY FRENCH: THE LAST WORD ON FINE DINING
The French taught us to dine truly finely, but all the constructs of haute cuisine—the rich sauces and starched linens, the crystal goblets and crested china, the theatrical dishes and condescending maître d’s—seem to have lost its savoir-faire. Or has it? Teddy Locsin Jr. serves up a tongue-in-cheek look at a stubborn (and persistent) tradition.

A SUNDAY IN THE COUNTRY
Neal Oshima sets off on a springtime drive along the French Atlantic Coast, tipping back fresh oysters and smoked fish from Brittany, and curves down into the North Basque Country along the Atlantic Pyrenees, unearthing extraordinary artisanal farms and fromageries that carry over their proud tradition to the high scales of modern production.

GAINING MOMENTUM: JON SYJUCO, ABBA NAPA, AND ELIZA ANTONINO
After indulging our appetites with Burger Bar, ‘Cue, Namnam, 8 Cuts, and Phat Pho, the three young restaurateurs behind The Moment Group—Jon Syjuco, Eliza Antonino, and Abba Napa—are now serving up their most aggressive expansion plan yet, with five new restaurant concepts set to open before 2015. As the brave trio goes all in, will the strength of their ambitions see them through?

EXCLUSIVE: THE STAR OF DAVID THOMPSON
When an Australian chef gave Thai cuisine its first Michelin star, the people of Siam were outraged. But the prodigiously talented David Thompson—now at the helm of Bangkok’s Nahm, recently named Asia’s best restaurant—is all about pushing boundaries.

EXCLUSIVE: THE SWEET LIFE OF JACQUES TORRES
Before Jacques Torres became known as Mr. Chocolate, the French pastry chef cut his teeth in the Côte d’Azur, eventually finding fame in Sirio Maccioni’s Le Cirque. The master chocolatier talks to Rogue about boating, his BMW bike, and chasing the sun.
